Nishi no Seki Daiginjo Hizo Koshu

Brewing year 2018, from water, rice, koji rice and brewing alcohol.

Handcrafted in southern Japan by the Kayashima Brewery, founded in 1873. The brewery is located in Oita Prefecture on the Kunisaki Peninsula, which is shrouded in religious myths.

A masterpiece made of 40% polished sake rice of the premier class Yamada Nishiki. The clear line of the original product with its light rice and soft fruit flavours is continued in this sake, which has matured over three years. An elegant reinterpretation with a slight astringency.
